It is estimated that up to 15 million U.S. citizens are currently suffering from food allergies. In 2013, a paper published on the CDC website stated that between 1997 and 2011, the prevalence of food and skin allergies increased in children under age of 18.
This is extremely worrying, as according to the Food Allergy Research & Education website, a food allergy sends someone to the emergency department every three minutes, which, according to them, amounts to approximately 200,000 visits to the E.R. every year.
